And here is the side of veggies:
Yesterday I went on a little hike that made me feel virtuous. And I was hungry. I thought of Margie's and the huge helpings. I went there, ordered a veggie burger with mushrooms and I side of veggies. As I had hoped, the veggies were heaped on a separate plate. The veggie burger was loaded with mushrooms (I love mushrooms but the fat content had to be through the roof because of the way they were prepared), and both plates also included large chunks of watermelon and orange. I ate both watermelon chunks, half an orange chunk, the mushroom burger, some of the home fries and some of the veggies. I felt like I had swallowed Texas, and remembered that this is the feeling I almost always get when I eat there. I think when I have simply oatmeal and fruit I don't get that.
Per my plan, I asked for a box. I dumped the remaining potatoes, pickles, onions, tomato slice, and veggies into the box, a box like the one above,and it was predictably very full. Because I was not staying in a Motel 6 I could bring it home and put it in the fridge.
Last night, when the full feeling wore off and I was hungry again, I made many of those veggies into a pureed soup, using a simple base of potato, onion, and water and some seasonings. Had it with toast.
This morning I scooped out the leftover home fries and microwaved them for breakfast. I threw in a few veggies. Again, yum. So far, three meals from one. I think the rest of the veggies would go well over some brown rice I have in the fridge and a bit of soy sauce. Lunch.
